Karamaya Products is looking forward to presenting our products at the Great New Zealand Food Show. Not only have we got the higher temperature fermentation products of black garlic and black sunchoke, but we also have a range of lacto fermented foods.
Our point of difference is that we are using local seawater as the ferment medium in which there are over ninety minerals present. The base for these products at present is our sunchokes (Jerusalem artichokes) which contain the highest source of inulin as a prebiotic. The 10 million units of lactic acid bacteria are the probiotic content. In other words, the probiotics in these products have their own food source to maintain their viability better. The two lacto fermented products shown are a chilli infused sunchoke, and a spicy version (which is probably more of a tasty clean flavour) containing fermented turmeric, ginger, horseradish plant, garlic scapes, and sunchoke leaves with the sunchoke as the base.
We have two raspberry products – a raspberry mousse and a raspberry chocolate spread. In these products, the extra anti-oxidants formed from the black sunchokes are used instead of sugar in their process. Customers agree that the raspberry mousse flavour is like eating a raw raspberry, and that the 100% Cacao addition to make the raspberry chocolate spread loses the high bitterness of the Cacao to a fuller chocolate flavour with a tangy raspberry addition – totally added sugar free and guilt free chocolate.
